Trappists Monks in the small village of Chimay started creating their ale and cheese almost 150 years ago. The Chimay Grand-Cru is aged for six weeks which lets the all natural rind develop a flowery aroma. The cheese is flavorful, creamy and fresh. Try it with the ale. By themselves they are quite tasty.
