Preserved Lemons


Popular in Moroccan and Middle Eastern cooking. It is a lemon pickled in its own juice with kosher salt. The pulp can be used to impart flavor in soups and stews. The peel is most valued - the flavor is slightly tart and intensely lemon. Wash or blanch before use.
